In coffee every year is different. Different climate, different levels of production and different external factors keep us alert looking for challenges and opportunities. This year, with a shorter harvest season and lower production, forced us to focus on optimizing the quantity of our regular coffee, without affecting quality. This is not to say that we did not do controlled fermentation experiments when the opportunity arose. Thanks to this constant curiosity and search for the flavors that our beloved coffee can achieve, this year we offer the following micro-lot.

Harvest 2021
For the first time, at the Finca Rosenheim, we have prepared separate micro-lots to the main production. This, in order to be take advantage of different and unique characteristics that we find between the different varieties we have and processes we do in our beneficio.
This year we have prepared a micro-lot based on a specific area of the plantation where we have coffee trees of a specific variety and another micro-lot where through controlled fermentation during the process, we have been able to achieve a differentiated coffee with very pleasant characteristics.
