Process: Washed / 40 hours machine dried

Fermentation: 36 hours submerged

"Perseverancia" is a remarkable micro-lot, born from a plantation area consisting of the Caturra and Tipica coffee varieties. This very plantation, unfortunately, fell victim to the coffee rust infestation in 2013. Despite the challenging condition of the plantation, we resolved to recover and sustain it, no matter the odds.

The year 2013 witnessed the detrimental effects of the coffee rust disease on the Finca Rosenheim, which led to massive losses in the production of our Caturra, Tipica, and Bourbon variety coffee trees, with many of the plants dying.

It became uneconomical to control the disease in mixed lots, which made us lose most of our Bourbones. As a result, we concentrated our efforts on the two lots with the predominant Caturra and Tipica varieties, known as Puente Arriba and Puente Abajo.

Although we lost a considerable number of coffee trees and production initially, we managed to keep the rust under control and replanted the trees that succumbed to the disease. Thanks to our diligent work and special care, the production of these two lots has been steadily increasing over the years, leading to the emergence of a unique coffee, renowned for its fruity and creamy tones, as expected from these coffee varieties.

This year, we are delighted and confident to offer this coffee as a micro-lot, bearing testament to our dedication as single-origin producers and our commitment to traceability across the entire harvest and milling processes.
